A single cask release from the Holyrood distillery, a Lowland distillery based in Edinburgh, bottled by independent bottler Duncan Taylor. Distilled in February 2021, matured for 4 years in a ex-sherry hogshead and bottled in August 2025. Only 100 bottles were produced. Non-chillfiltered, naturally coloured and bottled at a cask strength of 54.1%. (Bottle size 750ml)
Nose: Bright dried fruits (sultanas, apricot), soft baking spices, orange zest, vanilla fudge, red apple skins, toasted nuts, and a gentle sweetness.
Palate: A rich and balanced palate with great texture. The sherry is balanced bringing soft spice and a dried fruitiness.
Finish: Impressive length on the finish, very unique and complex.
Holyrood Distillery, established in 2019, is the first single malt distillery in Edinburgh since 1925. When we first visited in 2023, their focus on high-quality, low-yield production and their work with yeast strains was amazing to see. Although generally cautious about releasing young whisky, when we tried samples for a potential exclusive, one cask in particular stood out and made the choice an easy one. In another first, we are excited to make one of Scotland's new-wave producers available in SA for the first time!
