DESCRIPTION
The Junmai Daiginjo Genshu represents the pinnacle of Akashi-Tai’s sake range. Brewed with exceptional care from 100% Hyogo-grown Yamadanishiki rice polished to 38%, the sake undergoes a long, slow fermentation to develop precision, depth and aromatic complexity. As an undiluted (genshu) expression, it is bottled at its natural strength, offering the most concentrated and expressive form of Akashi-Tai’s Junmai Daiginjo style. Bottled at 16%. TASTING NOTES
Nose: A vivid aromatic burst, melon and lemon, bitter orange, herbs like sage and subtle green-grass/mineral nuances. There is a refined balance between floral brightness and gentle herbal complexity.
Palate: Harmoniously balanced: citrus-driven (lemon, bitter orange) with a refined, mineral-rich backbone. The texture is smooth but substantial, with subtle salinity and elegant minerality.
Finish: Long, clean, and lingering. The citrus and mineral notes meld into a sustained, dry-yet-refreshing finish that leaves the palate clean and invites another sip.
