Grapes are sourced from the elevated slopes of the Hemel-en-Aarde Ridge, the valley's coolest and highest ward. This 2023 Pinot Noir reflects a site shaped by Atlantic breezes and ancient soils of weathered sandstone interlaced with Bokkeveld shale. These clay-influenced soils naturally limit yields, producing small, concentrated berries. Crafted in a classic Burgundian style, the wine underwent spontaneous fermentation with a high proportion of whole bunches and minimal punch-downs for gentle extraction. It matured for 12 months in 300L French oak barrels (30% new, the balance in seasoned oak) before bottling. Residual Sugar 1.5g/L. Bottled at 12.5% (Bottle size 750ml)
Nose: Bright and lifted, with aromas of sour cherry, raspberry, and wild strawberry intertwined with hints of Campari spice, dried herbs, and a subtle earthy undertone.
Palate: Fine-boned and precise, showing red berry fruit and a touch of pomegranate alongside savoury nuances. The texture is supple yet structured, balancing old-world restraint with a core of vibrant fruit.
Finish: Long and quietly persistent, where fine, earthy tannins provide gentle grip and well-judged acidity carries the wine with freshness. A lingering savoury note and red fruit brightness define an elegant, composed close.
