The Born of Fire wines are winemaker Sophie Schaal’s homage to Cape Fynbos, and its ability to thrive after a wildfire. The Born of Fire vineyard lies less than 40km from the ocean, benefiting from coastal conditions. Resting on partly decomposed parent rock, offering good nutrient reserves and excellent water-retention properties, the vineyard holds organic certification, adhering to principles of organic farming. This means avoiding artificial chemical fertilizers, pesticides, and herbicides. Grapes are meticulously hand-picked during the coolest part of the day. After gentle pressing and settling, the juice is transferred to 300-litre barrels and tanks, where fermentation begins naturally with wild yeast. Following this process, the wine ages for 12 months in barrels and tanks. Residual sugar: 4.7g/l. Bottled at 13.5%. (Bottle size 750ml)

Nose: Notes of mango, papaya, and dried lemon.

Palate: Deep and complex, balancing tropical fruit, spicy oak, and a peppery quality.

Finish: The long finish combines brightness with creaminess.
