Released in 2021 as part of the Milk & Honey Apex Series. Distilled on 13 July 2017, matured in ex-bourbon casks and finished in fortified style pomegranate wine casks from Rimon Winery (an Israeli winery specialising in producing pomegranate wine) for a period of six months before being bottled on 11 October 2020. Non-chillfiltered, naturally coloured and bottled at a natural cask strength of 60.3%. Only 1,912 bottles were produced. (Bottle size 750ml)

Nose: Ripe pomegranate, followed by a swirl of rich vanilla, roasted coffee and butterscotch. Strong earthiness, accompanied by notes of orris root, spearmint and freshly baked sour apple.

Palate: Juicy, with crushed pomegranate grains, dried figs and a bouquet of spicy-sour herbs.

Finish: Long and dry, with a hint of toasted oak, followed by sourdough pretzels with a side of red fruits.
