DESCRIPTION

From two sites along the Cape Coast, the 2022 Illimis Chenin Blanc blends cool-climate fruit from Elgin, planted in 2006 on Bokkeveld shale, with younger vines on Stellenbosch’s decomposed granite. Hand-harvested on 10 February in Stellenbosch and 10 & 22 March in Elgin, the grapes were whole-bunch pressed after overnight cold storage. Fermented spontaneously in neutral oak and matured for seven months on the lees, the wine was lightly filtered before bottling. Residual sugar 1.5g/l. Bottled at 13.5%. (Bottle size 750ml)

TASTING NOTES

Nose: Floral and citrus blossom aromas unfold with hints of pear and fresh stone fruit.

Palate: Graceful balance of white peach and ripe pear, showing weight and concentration carried by subtle lees-derived texture.

Finish: Long and linear, tapering into restraint with chalky freshness and lingering savoury salinity that promise both elegance and longevity.
