DESCRIPTION
Sourced from two vineyards — “Sunset” in the Simonsberg and “Stonefield” in the Helderberg — this 100% Cabernet Sauvignon reflects Stellenbosch’s coastal influence and gravelly soils. Harvested in March 2012 at optimal ripeness (24–25° Balling), the grapes were handpicked, destemmed, and fermented in open tanks with manual punchdowns. Basket pressing and natural clarification preceded maturation in French oak barrels for 31 months. Only 4,304 bottles and 408 magnums were produced. Bottled at 14.5%. (Bottle size 750ml)
TASTING NOTES
Nose: Aromatically complex, with red berries, cassis, and violets interlaced with mocha and cedar. Subtle sweetness on the nose hints at ripeness, while barrel influence adds structure and depth.
Palate: Full-bodied and elegant, showing cassis and dark plum with a refined interplay of cedar and spice. The oak is seamlessly integrated, framing the fruit without overshadowing it.
Finish: Poised and persistent, with fine-grained tannins and a measured acidity that carries the flavours to a graceful close. Balanced and age-worthy, with the structure to develop beautifully for up to 20 years.
