DESCRIPTION
Akashi-Tai Daiginjo Genshu is one of the flagship sakes from Akashi-Tai, produced only in the cold winter months to allow for slow, controlled fermentation. Made from Hyogo-grown Yamadanishiki, Japan’s most prized sake rice, polished to around 38%, removing over 60% of the grain to achieve exceptional purity and finesse. As a genshu (undiluted sake), it is bottled at its natural strength, giving greater aromatic intensity and a fuller flavour profile. Bottled at 17%. (Bottle size 720ml)
TASTING NOTES
Nose: Elegant and floral with delicate aromas of white spring-flowers and acacia honey, layered with ripe orchard and stone fruit, think pear, honeydew melon, plus a subtle hint of aniseed.
Palate: Soft and fruit-driven pear skin, crisp green apple, and gentle papaya combine with fine mineral undertones and a touch of cut grass or hay. There's a delicate acidity that keeps it refreshing, yet the overall body remains generous and well balanced.
Finish: Clean and dry-leaning, with lingering notes of ripe pear drying into faint mineral and saline echoes. The finish invites another sip, being composed, refined, and quietly complex.
