Tokara Director's Reserve White 2018 consists of 63% Sauvignon Blanc and 37% Sémillon. Only grapes from the estate's best blocks of Simonsberg mountain vineyards and then only the best grapes of these blocks are used to make this flagship white wine. The grapes were hand-picked at optimal flavour ripeness, de-stemmed, crushed and pressed immediately in an inert press. The press juice and free-run juice were kept separate and settled overnight, before the clean juice was racked off. The juice was then inoculated and sent to 400-litre barrels for fermentation. All the barrels used were French oak of which 32% was new. After fermentation the barrels were topped and left on the lees for 9 months with regular lees stirring. The wine was blended in November, stabilised, filtered and bottled soon after. The wine spent a total of 9 months in barrel. A total of 9,770 bottles were produced. Bottled at 13.5%. Nose: The nose is complex, exhibiting attractive notes of gooseberry and pink grapefruit all intermingled with hints of lemon grass and lightly toasted almonds. There is an underlying flintiness and graphitic note that affirms the contribution from the Semillon.

Palate: On the palate the wine enters full and rich reminiscent of the aromas on the nose. The wine has amazing clarity and depth with a zesty persistence.

Finish: A complex and generous finish.

Tokara was purchased in 1994 by GT Ferreira for residential purposes, but it wasn’t long before the great potential for planting vineyards was recognised inspiring the planting of classic varietals on the 400m above sea-level slopes.
