Tokara Director's Reserve Red 2019 consists of 70% Cabernet Sauvignon, 15% Petit Verdot, 9% Merlot and 6% Cabernet-Franc. Only grapes from the estate's best blocks of Simonsberg mountain vineyards and then only the best grapes of these blocks are used to make this flagship red wine. The grapes were hand-picked between 21 February and 3 April at optimal ripeness. There is a period of cold maceration for up to 5 days before the fermentation starts spontaneously. The grapes were fermented in stainless steel and wooden upright (foudre) fermenters. The wine was put to barrel for malolactic fermentation after which it was racked, sulphured and put back to barrel for further maturation. The wine spent a total of twenty-two months in 54% new French oak - the rest being older French oak barriques. During maturation the wines received four racking’s, all done barrel to barrel. The wine was bottled in January 2021 without fining and a light filtration. Bottled at 14%. (Bottle size 750ml)

Nose: The nose showcases complex aromas including ripe red and black berry fruit with hints of creamy cassis, cedar wood and toasted oak.

Palate: The wine enters the palate with incredible purity and focus. Flavours are those of dark cherry, blackberries and ripe plum skin. Sumptuous and full there is a pleasant hint of spice on the mid-palate.

Finish: Fine, firm tannins on the finish. Lingering notes of toasted oak and tobacco.

Tokara was purchased in 1994 by GT Ferreira for residential purposes, but it wasn’t long before the great potential for planting vineyards was recognised inspiring the planting of classic varietals on the 400m above sea-level slopes.
