Olifantsberg Soul of the Mountain The Matriarch 2019 is produced from a blend of 72% Roussane, 20% Grenache and 8% Chenin Blanc. Grown on echalas vineyards, these staked vines create a totally different micro-climate than trellised vineyards. Lower temperatures within the micro-climate ensure better acidity and more aromatic grapes. Grapes are sourced from 7 different vineyard sites across the Olifantsberg Mountain. Within each site pickings are staggered from 2 to 6 times, retaining natural acidity early on and building complexity throughout the different ripening stages. Overnight settling is done after whole bunch pressing. Enough fine lees are added to the ferments to increase mouthfeel and texture on the final wines. A small component of a skin ferment is done on Grenache Blanc and a whole bunch ferment on the Roussanne in Speidel eggs. All components mature on its full lees and no lees stirring takes place. The blend is compiled after each component has matured separately for 7 months in oak and the blend is matured for a further 3 months in foudre before bottling (8% new French oak). Residual sugar: 3g/l. Bottled at 13.5%. (Bottle size 750ml)

Nose: Alluring aromatics of citrus peel, white blossoms some waxy character and spice.

Palate: Intense, multilayered wine that is round and textured with tangy acidity.

Finish: A savoury finish.
