This cabernet was made to showcase the terroir of Stellenbosch. Two vineyards were used for this. Both are trellised, planted on south-west facing slopes and in decomposed granite soils. The vineyards are in Bottleray and Jonkershoek valley. The grapes were harvested between 25 to 25.5° Balling. After sorting they were placed in stainless steel tanks to initiate the fermentation process. The cap was kept wet with regular pump-overs. Further maceration was allowed before drawing off and light pressing. From there it was transferred into French oak barrels, where it was allowed to undergo malolactic fermentation. This wine spent 18 months in 25% new French oak barrels and the balance in 2nd, 3rd and 4th-fill. Bottled at 14.5%. (Bottle size 750ml)
Nose: Aromas of complex blackberry, liquorice and cedar notes.
Palate: Fresh fruit on entry, blackberry, blueberry and cherries. Mid-palate reveals hints of tea leaf with a powdery tannin structure
Finish: Elegant with a short to medium finish. Lingering notes of cedar oak spice.
