Made entirely from Sauvignon Blanc grown on the cooler, Atlantic-facing slopes of the Helderberg in Stellenbosch. Grapes were handpicked in the early morning and, in an experimental twist, one-third of the block received a light desiccation two weeks prior to harvest to retain acidity and concentrate flavour. After gentle destemming and pressing, fermentation was carried out cold in stainless steel to preserve fruit purity, followed by three months of lees contact before bottling. Residual Sugar 2.1g/L. Bottled at 12.% (Bottle size 750ml).
Nose: Fragrant and vibrant, with lifted aromas of honeydew melon, crushed blackcurrant leaf, and green fig. A saline edge and faint whiff of flint hint at the wine’s coastal origins.
Palate: Clean and incisive, with a bone-dry profile showcasing notes greenfig, lemongrass, and melon. The fruit character is punchy but precise, with the lees contact adding a subtle creaminess beneath the citrus drive.
Finish: Zippy and mineral-laced, the finish is taut and focused. A brisk line of acidity refreshes the palate, while the granite terroir leaves a lingering stony imprint that underscores the wine’s finesse and food-friendly edge.
