Illimis Riesling 2017 was produced from grapes sourced from a young, bushvine vineyard nestled on the south facing slope next to a wetland in Darling. Grapes were whole bunch pressed and underwent spontaneous fermentation in 4th-fill barrels. Aged 7 months in barrel, lightly filtered and no additions apart from sulphur. Bottled at 12%. Nose: Delicate floral aromas, fynbos with hints of pear and quince. An intriguing mineral salinity.

Palate: On entry lovely fruit notes of pear, quince, green apple. Lovely medium palate weight with a rich texture.

Finish: Beautiful flinty minerality balances the richness. Finish is soft with a subtle salinity.
