Grapes for the Craven Cabernet Sauvignon 2022 were sourced from a lovely little site on the Karibib farm. Going against what is considered 'standard operating procedure', grapes were fermented with a good percentage of whole bunch (75%) with the remaining destemmed on top. Grapes were pressed a little earlier than complete dryness to make sure the tannins didn’t get too aggressive and finished fermentation in tank. The wine was then matured in neutral 300-litre barrels for 12 months before bottling. Bottled at 12.5%. (Bottle size 750ml)
