Released in late-2018, the Sauternes Cask Finish follows a range of wine cask releases bottled over the previous five years (since 2013). Distilled in 2012, this latest offering differs in that it was initially matured in ex-bourbon barrels (30 in total), before being finished in fresh Sauternes hogsheads for 5 months. 10,000 bottles were produced. Non-chillfiltered, naturally coloured and bottled at 50%.

Nose: Maritime peat smoke, citrus and tropical fruit with hints of buttery sweetness.

Palate: Soft creamy chocolate and liquorice with waves of peat smoke, cinnamon and mixed fruit.

Finish: Layered peat smoke and fruit with lasting honey sweetness.
