Daftmill Single Malt Scotch Whisky

    Located in the Howe of Fife, northeast of Edinburgh, Daftmill is a traditional farm distillery, independently owned and operated by the Cuthbert family. The distillery only runs in the farm’s quiet periods — mid-summer (June and July) and winter (November to February) — sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert tends the family estate, growing the malting barley used to make the whisky.

    Daftmill was established in 2005, though it didn't release any whisky until June 2018, allowing its spirit time to mature before going to market. Built from a converted 19th-century farm steading, the distillery uses a pair of copper pot stills produced by Forsyths, designed and operated to give lots of copper contact and reflux. Annual capacity is around 65,000 litres of alcohol, but since the distillery only operates at set times of the year, general production is only 20,000 — a fraction compared to larger malt producers.
