Named after Dom Pérignon, a monk and cellar master at the Benedictine abbey in Hautvillers who pioneered a number of winemaking techniques around 1670, Dom Pérignon Champagne is always a vintage champagne, meaning that all grapes used to make the wine were harvested in the same year. Produced by Dom Pérignon’s cellar master Vincent Chaperon, Dom Pérignon 2013 is an assemblage of 60% Pinot Noir and 40% Chardonnay grapes. Secondary fermentation in bottle (Méthode Traditionnelle) and aged on lees for a minimum of 96 months. Residual sugar: 4g/l. Bottled at 12.5%. (Bottle size 750ml)

Nose: The nose is full and varied, mingling flowers with fruit, and the vegetal with the mineral. The bouquet is tactile, subtly enticing us along a trail of powdery white flowers and nectareous apricot, followed by the freshness of rhubarb and mint and the minerality of ash. White pepper.

Palate: Powerful fruit welcomes you, reminiscent of white peach, apricots and pear. After a welcoming opening, the wine quickly becomes vibrant and then literally explodes with a surge of effervescence and tonicity.

Finish: Focused by the acidity, the finish brings a penetrating tautness marked by ginger, tobacco and toasted accents.
