Produced in Normandy, northern France, Calvados is a traditional apple and pear brandy distilled from fermented cider. The region’s cool maritime climate and rich clay-limestone soils provide the ideal conditions for orchard fruit of great aromatic complexity. After natural fermentation, the cider is distilled in either copper pot stills or continuous column stills, depending on the appellation, and matured in French oak casks to develop richness and depth. The main producing areas — Calvados, Calvados Pays d’Auge and Calvados Domfrontais — each highlight different expressions, from apple-dominant styles to blends that showcase the supple floral character of pear.
