Valdo Marco Oro Prosecco Superiore DOCG extra dry is made from Glera grapes from the Valdobbiadene region. Harvest starts in September, grapes are collected and softly pressed. The gentle press ensures the finest quality juice is collected and used. The juice is filtered, clarified and then inoculated to start the first alcoholic fermentation and make the base wine. Once the base wine is complete, the wine is moved to stainless steel tanks for the secondary fermentation. Yeast and sugar are added and the tanks are sealed tightly under pressure. During this secondary fermentation bubbles get trapped into wine, what the french call "prise de mousse". This is the Martinotti-Charmat method. After 3 months the prosecco is bottled and matured for a further 2 months in bottle before release. Bottled at 11.5%. (Bottle size 750ml)
Nose: The nose bursts with aromas of wild apple, golden delicious apple and acacia flowers.
Palate: A zesty palate with notes of apples and pears with hints of oranges.
Finish: A refreshing mousse with with hints of naartjies and honey on the finish.
