Grapes for the Scions of Sinai Feniks Pinotage 2022 were harvested from a unique old Pinotage single vineyard that was planted in 1976. Dry-farmed bushvines rooted in coarse sandy decomposed granite soils high in silica. This also happens to be South Africa’s closest Pinotage to the ocean, at the foot of Sinai Hill, southern Stellenbosch. Low yielding vines with uniquely small grape clusters. 60% whole-bunch fermentation (with a small portion semi-carbonic), the ferment is unusually slow and long for Pinotage adding spice, intensity and structure. No additions or manipulations of the pure grapes, except carefully judged SO2. Malolactic fermentation takes place spontaneously in the long barrel ageing. No new oak. Aged on its fine lees for 12 months before being bottled. 1,665 bottles were produced. Residual sugar: 1.3g/l. Bottled at 12.5%. (Bottle size 750ml)
