Grapes for the Saurwein Om (a word symbolising the concept of universal creation and also synonymous with peace) Pinot Noir 2021 were harvested from a 2006 dryland vineyard situated in the Hemel-en-Aarde Ridge region, situated just 12km from the sea and lying 300m above sea-level. The soils are granite origin with a significant portion of clay. Pinot Noir clones are 115 and 667. It was a late vintage, with great ripening conditions and very healthy fruit. The wine was picked in two batches from two vineyard sites just 100 meters from each other. Grapes are hand-picked, hand-sorted, grapes are cold-soaked, fermentation is spontaneous, post-fermentation maceration is complete when the tannins are optimal, and the wine matured for 10 months in 228-litre French oak barrels (new and older). Bottled at 13.5%. (Bottle size 750ml)
Nose: Beautiful alluring aromas of red cherry, wild strawberry with hints of fynbos.
Palate: Good fruit on entry, notes of cherries, raspberries and wild strawberries. Mid-palate reveals a slightly more savoury flavour profile with hints of cured meat.
Finish: Elegant with refreshing acidity and soft supple tannins. Lingering notes of fynbos and white pepper.
