The bush vines are 55 years old, naturally low-yielding at 6 t\/ha, producing well-balanced fruit in a warm, dry climate tempered by altitude and coastal influences. Grapes were hand-harvested in the early morning of 6 February 2023 at 21° Balling, chilled overnight, hand-sorted and gently whole-bunch pressed. The juice was settled overnight at 8°C before being racked to old French oak barrels, where spontaneous fermentation occurred. The wine remained on its lees for nine months with stirring prior to bottling, followed by a further 24 months of bottle ageing before release. Residual Sugar 1.8 g\/L.
