Sadie Family Pofadder 2021 is made from the Cinsaut/Hermityk (South African synonym) grape varietal. Concrete tanks are filled whole cluster to about 50% and then destemmed 50% to get some juice in the tank to have the initiation of fermentation. The fermentation is for about 30 days on the skins and then grapes are pressed in an old basket press. After pressing the wine is transferred into 28 year old conical wooden casks that do not impart any wooden flavours and the age and the saturation of the wooden staves also make for a very slow reaction of the resultant wine with oxygen. The wine is left on the lees for 11 months and then racked to another concrete tank for an additional month to settle clean. Two weeks prior to bottling 60mg/Litre of sulphur is added and the wine is bottled from the fine lees. Bottled at 13%. (Bottle size 750ml)
Nose: The wine may hold massive volumes of bright-red fruit and lifted aromatics. Notes of redberries, blackberries, plums with hints of sweet spice.
Palate: On entry bright red fruit welcomes you with notes of raspberries and strawberries standing out. Mid-palate reveals a little more complexity with notes of dark red fruit and earthy wood spice characteristics. Elegant medium bodied wine.
Finish: Firm tannins with lovely lingering notes of red fruit and sweet spice. This wine will undoubtedly benefit from aging, but it is delicious already; it will be a struggle!
