Free to Be is a range of small-batch wines that aren’t restricted by the boundaries of the estate and its style, pushing a philosophy of minimal intervention to the extremes. Free To Be 2019 is made from a blend of 65% Cabernet Sauvignon and 35% Cinsault. The Cabernet Sauvignon is from a vineyard planted in 1991 on Remhoogte and the Cinsault is from an old bush vine vineyard in the Darling area on the West Coast. Fermentation is done whole-bunch and uncrushed for both varietals. A CO2 blanket is maintained by adding dry ice until the commencement of fermentation. Minimal mixing of the tank during fermentation to maintain the integrity of the berries and the fermentation on the skins lasts approximately 2 weeks before pressing and fermentation being allowed to finish in the tank. The Cabernet Sauvignon spent 1 year in stainless steel, so it is unoaked. The Cinsault spent the year in 4th-fill French oak barriques. Bottled at 12.5%. (Bottle size 750ml)

Nose: Strawberries, cherries, cassis and fennel.

Palate: Fruit character follows through from the nose. Light and juicy with gentle tannins and a fresh acidity.

Finish: Medium length with subtle salinity and hints of black olives.
