Similarly to the 17yo, the 21yo is matured in a combination of second fill ex-bourbon casks and first fill ex-Oloroso sherry, Spanish oak casks. The 21yo, however, has a higher proportion of ex-sherry casks, imparting greater depth and complexity. Non-chillfiltered and bottled at 46%.
Nose: Full bodied with notes of apples and pears. Quite fragrant with a soft spice emerging and butterscotch with malted milk biscuits, bananas and a touch of salt.
Palate: A sweet start, moving on to marzipan and then sour green apples and soft cinnamon. There's also vanilla, dry oak and a return of the bananas from the nose.
Finish: Creamy, toffee, vanilla, baked red apple with a hint of smokiness and a drying finish.
