Made with mainland peat from St. Fergus, on the northeast coast of Scotland, to a phenol level of 35 ppm, and fermented for 160 hours for a fruit-forward spirit. Matured for 5 years in American oak ex-bourbon barrels before finishing in Pedro Ximénez and Oloroso sherry puncheons.
