Fermentation took place in stainless steel tanks with regular pump-overs at cooler temperatures to maximise fruit expression and build structure through extended skin contact. Following malolactic fermentation, the wine was matured for 24 months in French oak barrels, 10% of which were new, before the final blend was completed with small portions of Mourvèdre, Cabernet Sauvignon and Grenache Noir from the estate vineyards.
