Grapes for the Illimis Grenache Noir 2021 were sourced from a bushvine vineyard that was planted in 2007. Grapes were picked by hand on 3 March and kept in cold storage overnight. 90% whole bunch, spontaneous fermentation and pressed after 8 days on the skins. Aged in neutral 500-litre and 300-litre barrels for 7 months and lightly filtered prior to bottling. Bottled at 14.5%. (Bottle size 750ml) 

Nose: Intriguing red fruit character, cranberries and sour cherries, laced with a mineral salinity and sweet spice.

Palate: Elegant bright red fruit on entry. Mid-palate reveals more of a cured meat savoury character.

Finish: Refreshing minerality with super soft tannins. Lingering notes of dried herbs and some sweet spice.
