The Chardonnay 2021 harvest finished 8 days later than 2020, because it was a slightly cooler vintage and so the grapes required a little more hang time to achieve optimal ripeness. The chardonnay vines are naturally low yielding and planted on northeast facing, stony, clay-rich slopes and are affected by the maritime weather. 94% barrel fermentation in a combination of 228-litre (68%) and 300-litre (26%) French oak barrels and 6% foudre. Matured for 9 months in 1st-fill (26%), 2nd-fill (32%), 3rd-fill (31%) and 4th-fill (11%). Released in January 2022. 44,400 bottles were produced. Bottled at 13.5%. (Bottle size 750ml)
Nose: Unusually prominent pear and lime fruit aromas and flavours are brought beautifully into focus by a tight line of bright natural acid and a long, dry minerality.
Palate: Lovely fruit forward entry showcasing pear, lime and hints of unripe peaches. Mid-palate reveals its subtle creamy texture that coats your palate without becoming flabby or rich.
Finish: Beautiful acidity with a subtle surprising salinity. The finish shows subtle nutty notes.
