The Carmen Stevens Sauvignon Blanc 2019 is a blend of fruit from Tygerberg, Elgin and Paarl. Handpicked at different fruit ripeness levels, fruit is then bunch sorted, pressed and fermented with pure yeast cultures, employing both a reductive and an oxidative winemaking method. When almost at the end of fermentation, a small percentage of wine is taken to barrel. After fermentation, all wines are kept on the lees and stirred, adding to the fullness of the after-palate. The final blend is therefore a combination of the different regions and styles of winemaking practices. Bottled at 13.88%. (Bottle size 750ml)
Nose: An inviting summer expression on the nose. Limes, ripe figs and just a drop of ripe passion fruit.
Palate: Clean and zesty. Flavours of figs, passion fruit and limes fill the mouth while the mid-palate shows the concentration and depth of fruit.
Finish: A lingering gooseberry note that is true to the Sauvignon Blanc varietal.
