Made from 100% Chardonnay grapes. Carefully harvested in order to preserve the quality of the fruit, grapes are sorted manually on a vibrating sorting table in order to retain only the most healthy fruit. The grapes are drained naturally before being pressed using a pneumatic press in order to gently extract the juices and conserve as much aroma as possible. Static cold settling of the musts occurs for 12 to 24 hours in stainless steel vats in order to obtain a bright, clear juice. Alcoholic fermentation is followed by malolactic fermentation, both natural, in stainless steel vats. 8 to 10 months in stainless steel vats in order to preserve freshness and minerality. The wine is racked twice before being bottled at the end of Spring. Bottled at 13%. (Bottle size 750ml)

Nose: A seductive and very classic Chablis nose offering vine peach, banana, citrus fruits and brioche.

Palate: The palate is well-balanced, rich, fresh and elegant. Ripe fruits combine harmoniously with mineral notes to give a soft mouthfeel.

Finish: The smooth, rich structure lingers on the end palate. 

Domaine Billaud-Simon was founded in 1815 by Charles Louis Noël Billaud upon his return from the Napoleonic Wars. He planted vines on his family holdings, which were later expanded through the marriage of his relative Jean Billaud to Renée Simon in the 1930s. Situated behind high walls near the river Serein, the winery is now helmed by Jean’s son, Bernard. At the age of 18, Bernard Billaud left Chablis for Paris to study fine art. He made a successful career in communications consulting but returned to Chablis in 1991. Bernard completely overhauled the winery, installing a pneumatic press, all new tanks, and the most modern fermentation equipment available. Although they now have state of the art technology, they maintain an important balance with traditional practices that include the use of natural yeast for fermentation, and natural advancement into malo. Most wines are vinified and matured in stainless steel and don’t see any wood.
