Grapes were harvested from vines planted in 2010. Picked between 6am and 10am to ensure grapes arrived at the winery below 14°C. Destalked and pressed into a settling tank for 2 days. Clear juice racked to a stainless steel fermentation vessel. A 17 day fermentation took place at 13.5°C. Only bentonite finings were used before a light filtration prior to bottling. Bottled at 13.5%. (Bottle size 750ml)
Nose: Classic aromas of elderberry flower and green fig on the nose.
Palate: Crisp, green litchi flavours on the palate.
Finish: Refreshing acidity on the finish with hints notes of green fig on the finish.
