An exclusive single cask, cask strength, single grain release from Strathclyde distillery, bottled by independent bottler Duncan Taylor in their Octave range. Distilled in 1989, matured for 31 years in oak casks before being finished in a reconstructed ex-sherrywood octave (approximately 60-litre cask) and bottled in 2021. Only 80 bottles were produced, each one individually numbered. Non-chillfiltered, naturally coloured and bottled at a cask strength of 53.5%. (Bottle size 750ml)

Nose: Sweet stewed fruit, bakery buttery apple with raisins and dusted with cinnamon. The soft sherry notes come out with light caramel toffee and a hint of bounty bar.

Palate: Buckwheat pancakes smothered in maple syrup. Rich dark chocolate that didn't come over in the nose. A waxy, oil textured mouth-feel with some citrus peel making an appearance. Some dried spice of cinnamon and cloves. The fruits of the nose continue.

Finish: Long and warming. Chocolate raisins and peanuts mixed amongst the fruits of the nose and palate that continue right to the end. Some toasted oak appears that make the finish a little drier, but all with an appealing residual sweetness.
