Grapes for the Scions of Sinai Heldervallei Cinsault 2022 were harvested from a single 1988 dry-farmed bushvine vineyard, rooted in decomposed granite soils, high in quartz, on the cooler south-east facing slope of Sinai Hill. Grapes undergo a long natural fermentation in open-top fermenters for 10-12 days. No additions or manipulations of the pure grapes, except carefully judged SO2. Malolactic fermentation takes place spontaneously in barrel. No new oak. Aged on its fine lees for 11 months in older 228-litre and 400-litre barrels before being bottled unfiltered and unfined. 1,265 bottles were produced. Residual sugar: 1.1g/l. Bottled at 12.5%.
