Grapes for the Illimis Cinsault 2021 were sourced from an old bushvine vineyard that was planted in 1974 on well drained, red, loam soils with granitic origin. Grapes were picked by hand (75% whole bunch) on 24 March and underwent spontaneous fermentation. Pressed after 11 days on the skins and aged in neutral 225-litre barrels for 7 months. Lightly filtered prior to bottling. Bottled at 13%. (Bottle size 750ml)

Nose: Beautiful elegant perfume aroma, with aromas of fynbos and rose petals shining through. Complimented by intriguing whiffs of turkish delight and sour cherry.

Palate: Bright red fruit on entry, sour cherry and raspberry coming through as well as hints of bruised red apple. Mid-palate has more of a herbaceous wild sage character, with a light to medium palate weight.

Finish: Quite moreish with lingering savoury notes with a hint of salinity.
