Produced from a blend of 80% Pinot Noir, 15% Chardonnay and 5% Pinot Meunier. The vines are planted on soils rich in limestone, Jurassic Kimmeridgian limestone in particular and chalk. Grapes are gently pressed, with the press machine calibrated to a low pressure. Only the first pressing (the “Cuvée”) is collected and transferred by gravity to tanks. After natural settling, malolactic fermentation is allowed, to create depth and complexity in the base wines. 5% of the base wine is matured in oak casks for 1 year and 40% reserve wines are blended in to achieve the classic house style. Secondary fermentation occurs in bottle and after disgorgement a minimal liquer d'expeditions (base wine mixed with organic sugar cane and then aged in oak casks and demijohns for at least 10 years) is added to balance the acidity. Held back for a minimum of 4 months to give the champagne a chance to settle before release. Residual sugar: 5.5g/l. Bottled at 12%. (Bottle size 750ml)

Champagne Drappier is the world's first carbon-neutral Champagne house and one of the region's most innovative. An eighth-generation family business, the house was founded in 1808, and occupies magnificent twelfth-century cellars built by Cistercian monks. It was members of this monastic order who travelled up from Burgundy to the Aube region nearly a millennium ago, and planted the early ancestor of Pinot Noir. In the early twentieth century, however, Pinot Noir had fallen out of favour in the region. Drappier could sense its potential, and was the first to replant it in the 1930s, earning ridicule from neighbours until the quality advantages became clear. Today, Drappier owns fifty-five hectares of vineyard around the town of Urville, with another fifty hectares under contract in the Côte des Bar, Montagne de Reims, and Côte des Blancs.
