Valdo Paradise Rosé Prosecco is made from a cuvèe of predominantly Glera and a red grape known as Nerello Mascalese. Harvest starts in September, grapes are collected and pressed to form the must. Soft-pressing of the red grapes, without any maceration on the skins, achieves the perfect salmon pink hue. The must is filtered, clarified and then inoculated to start the first alcoholic fermentation. Once the base wine is perfect, the wine is moved to stainless steel tanks for the secondary fermentation. Yeast and sugar are added and the tanks are sealed tightly under pressure. During this secondary fermentation bubbles get trapped into wine, what the french call "prise de mousse". This is the Martinotti-Charmat method. The bottle art was designed by hand by New York designer Ceci Johnson. Bottled at 11.5%. (Bottle size 750ml)

Nose: The nose bursts with aromas of strawberry and ripe melon.

Palate: A delicate palate with a whirlwind of sensations. Peach and apricot notes standing out the most.

Finish: Creamy bubbles with a crisp finish make this a lively and delicious rosé.
