Cederberg Blanc de Blancs MCC 2017 harvesting took place on 27 January 2017 from 19 year old vineyards with an average yield of 6 tons per hectare. Made from 100% Chardonnay grapes, picked at 19° Balling, whole bunch pressed and tank fermented with selected yeast strain. The tirage is prepared (sugar, yeast and riddling agents) and the wine is bottled under crown cap for second fermentation. Further sur lie maturation takes place in bottle over the next 48-52 months before riddling and disgorging of the Cap Classique. Minimal dosage to keep the residual sugar low at 4.2. Bottled at 12%. (Bottle size 750ml)

Nose: An inviting bouquet of apricot, pear and oranges.

Palate: Lively green apple notes with a hint of lime on entry. Impressive mousse with lovely delicate small perlage.

Finish: Crisp clean finish with subtle lingering notes of orange rind.
